"Here we are on the eve of the Spring Equinox. Whoa! In one week we'll be getting ready to sleep in our bed for the final night before our adventure. What better time to start thinking about what gear we still need. Hehehe.... For the next 6 months my full-time job will be walking...Geez!"

3/20/2024 - last of the dehydration sessions

We've got loads of goodies for the trail to be sent to drop locations over the next few months. Today we are combining a series of meal packs for the collective family freezer. They will be combined in packages to be sent for around 4 (or so) days resupply to supplement what we pick up along the way. We've got a month's supply of our favorite rice noodles from the Asian market that we'll include as well. It's quite the operation.
Things I've learned:
buy pre-dehydrated mashed potatoes. trust me.
don't dehydrate onions in your own home unless you want that smell FOREVER
all sorts of sauces can be powdered after dehydration.
some veggies/fruits get really sharp when dried. they must be wrapped in something like parchment paper before vacuum sealing.
grind dried leeks to a powder for a SECRET WEAPON of flavor
chicken breast, trimmed of fat, pressure cooked, and shredded prior to dehydration is the only safe way. flavor the water you pressure cook in.

We are trying to make everything as light as possible, combining functionality in everything we can. As we get closer we will keep pairing down what we bring, trying to only keep what is essential. It's not easy, but it is fun.
Every time we have a big project coming up I insist on using the whiteboard to get all the information out there. I suggest re-considering a white board in the home. It's way better than the one at work. 😉
